I may have gone a little overboard at the Peach Barn.
Have I mentioned how much I love peaches?
I’m like the Forrest Gump of peaches. I like peach pie, peach bellinis, fresh peaches, peach salsa… My personal favorite though is peach cobbler.
Now there are two very distinct schools of cobbler. There is the type of fruit cobbler that is baked in a square dish with a thicker, slightly sweet pasty crust on the top and the bottom. And then there is the doughy type of cobbler which is more cake like and usually baked in a rectangular dish.
The recipe I’m sharing is the latter.
But first, I want to give credit where credit is due. This is not my own recipe, but rather a recipe I found online several years ago, submitted by a gal named Lenna. It is so yummy and it is a breeze to make. You will love it!
Here is all you need:
- 1/4 cup of melted butter
- 1 1/4 cups all-purpose flour
- 1 cup white sugar
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 1 cup milk
- 1/2 tsp. vanilla
- 4 cups of fresh peaches
First things first – peaches! Lenna calls for 4 cups but I usually measure this generously. You can slice them or cut them in a large dice. I’ve done it both ways. I felt like chopped peaches last night.
Next, in a large bowl mix together the flour, sugar, baking powder, and salt. Then add the vanilla to the milk.
Mix the milk with the dry ingredients until most of the lumps are gone. It’ll be kinda like pancake batter.
Next, pour the melted butter into a 9 x 13 baking dish then pour the batter over the butter.
Spoon the peaches over the batter but do NOT mix or stir.
Bake in a 350 degree oven for 55-60 minutes or until lightly browned and bubbly. Look at that. Seriously.
It’s actually best if you can let it cool for just a couple of minutes so it’s not so hot that it will burn your mouth. (I know this from personal experience.) Just be sure to serve it warm so that when you put a scoop of homemade vanilla ice cream on top it will start to melt a little. That is assuming you have any left. Which I didn’t. So it was good ol’ Blue Bell Homemade Vanilla for us last night.
It’s that easy! And it’s so delicious. So when you make it, be sure to give some props to Lenna. And while you’re at it – maybe some props to the good Lord for the gift of peaches to begin with.
